Spinach, basil and pine nut rice

Makes for 4 persons
Ingredients:
2 cups rice
2 medium/1 large bunch spinach leaves, washed well and chopped
2 tablespoons fresh basil leaves, diced
7-8 button mushrooms, sliced
1 tablespoon pine nuts
Seasoning:
Olive oil
2 cloves garlic, diced
½ white onion, diced
1 tablespoon Italian seasoning (available from supermarket)
1 cup cream
Salt and pepper to taste
1. Place spinach leaves and 3 cups water in blender. Add a little oil if necessary. Process spinach leaves until it turns into a pulp.
2. Pour through a sieve and only keep the liquid from the spinach leaves. Discard the pulp and set liquid aside.
3. Heat oil in pan.
4. Add garlic, onion and pine nuts and fry until golden brown.
5. Add mushrooms and fry for about 2-3 mins until soft.
6. Add uncooked rice and fry for 2-3 mins to coat the rice well with the oil and fried ingredients.
7. Add the basil leaves and Italian seasoning and mix well.
8. Transfer all ingredients into a rice cooker* and add the spinach liquid and 1 cup cream.
9. Add salt and pepper to taste.
10. Once cooked, serve rice topped with grated parmesan cheese. Serve dried chilli flakes at the side for those who like a little spice.
* You can also cook rice in the microwave. Place all ingredients in the casserole dish and cover with lid. Cook in microwave between 15-20 mins.
