Winter Warmers - Quick Pumpkin Soup

Ingredients:
250 gm pumpkin, large cubes
1 large potato, peeled and cubed
Seasoning:
1 tablespoon olive oil
2 cups vegetable stock
Handful dried sage
Salt and pepper to taste
Topping:
Fresh cream
Handful fresh parsley, chopped
1. Place pumpkin cubes in the rice cooker on a steaming rack. Add 2 cups of water and allow to cook on the steam setting for about 20 mins until soft.
2. Once soft, blend pumpkin in a food processor until smooth.
3. Place olive oil in a pan. Add the blended pumpkin, vegetable stock, potato and sage.
4. Cook for 20 mins. Add salt and pepper to taste.
5. Top with parsley and fresh cream to serve.
