Middle Eastern tofu with Couscous

For the tofu:
Ingredients
½ block organic tofu (250gm), cubed
½ green capsicum (green pepper), diced
½ white onion, diced
1 organic tomato, diced
Seasoning:
Olive oil
½ teaspoon garam masala
½ teaspoon sweet paprika
1 teaspoon dried mint leaves
1 teaspoon dried fenugreek leaves
2-3 tablespoons fresh tomato sauce
Salt to taste
For the couscous:
Ingredients
2 cups couscous
1 piece garlic, grated
1 spring onion, diced
1 tablespoon roasted almonds
1 tablespoon fresh parsley, diced
Seasoning
2 teaspoons butter
Salt to taste
1. Place the couscous in a bowl and add 3 cups water. Cover the bowl tightly with cling wrap and set aside while you prepare the tofu.
2. Heat oil in a pan.
3. Add the diced onions and fry for 2 mins.
4. Add the tofu and fry for 7-10 mins until all sides are slightly brown, stirring occasionally.
5. Once the tofu is browned, add the diced tomato and capsicum.
6. Fry for 10-12 mins, until capsicum is soft.
7. Add the garam masala, sweet paprika, mint and fenugreek leaves and salt and fry for another 5-7 mins to ensure all the spices have been mixed in well.
8. Finally, add the tomato sauce and allow to simmer for 2 mins.
9. The couscous should be ready by now. If it is too dry, just add more water.
10. Add the butter, garlic, spring onion, almonds, parsley and salt.
11. Serve with the tofu.
