Mexican Rice

This dish can be served as a salad or a side dish with tacos or casseroles.

Ingredients
1 cup rice, cooked and cooled
1 large red capsicum, diced
½ red onion, diced
2 tablespoons fresh parsley, diced

Seasoning
2 tablespoons butter
Salt and pepper to taste


1. Add butter to the pan.
2. Fry the onions in the butter for about 2-3mins until they appear translucent.
3. Add the capsicum and fry for a further 5-7 mins until cooked.
4. Add the rice and mix well, adding more butter if necessary.
5. Add salt and pepper to taste.
6. Turn off the flame and mix in the parsley.
7. Serve.
