Frittata (ovo-vegetarian)

For this recipe, be sure to use a large pan that is suitable to be placed under a grill.
Makes for 2 persons
Ingredients:
3 large eggs, whisked
1 large potato, sliced thinly
4 fresh button mushrooms, diced
˝ red capsicum, diced
˝ zucchini, diced
1 roma tomato, diced
Spring onions, diced
Seasoning:
Olive oil
Dried oregano
Feta cheese, small cubes
Salt and pepper to taste
1. Add oil to pan.
2. Lay out potatoes flat on pan like a fan, covering the whole pan.
3. Fry potatoes for about 5-7 mins. Do not stir potatoes. Lift the potatoes slightly with a ladle to check on them. They are ready once they turn dark on the bottom.
4. Once potatoes are ready, remove from pan and set aside.
5. Add oil to pan.
6. Add spring onions, capsicum, tomato and mushrooms to pan. Fry for 7 mins.
7. Add zucchini to pan and fry for a further 3-5 mins.
8. Once all vegetables are fried well, add potatoes to the pan, flattening out all the vegetables to cover the whole pan. Do not leave any empty pockets.
9. Add salt and pepper to whisked eggs. Pour whisked eggs over vegetables. Ensure all vegetables are covered by the eggs.
10. Add the Feta cheese on top of the eggs and vegetables.
11. Turn on the grill to the highest temperature.
12. Fry for 7-10 mins until egg is cooked on the bottom. Do not at any time stir the frittata in the pan.
13. Transfer pan to the grill and cook for a further 5-7 mins to brown the top of the frittata. Check on it to ensure it doesn’t burn.
14. Serve with a salad.
