Cheese toast

This dish is great as an afternoon tea snack, finger food or an entrée for a dinner party.
Makes for 2 persons
Ingredients
½ baguette
50 gm cheddar cheese, grated
50 gm bread crumbs
½ white onion, diced
2 tablespoons coriander leaves
½ green chilli, diced (optional)
3-4 tablespoons milk
Salt and pepper to taste
1. Turn on the grill to the highest temperature.
2. Mix cheese, bread crumbs, onion, coriander leaves, chilli and milk together in a bowl so that it all sticks together, but be sure that the mixture is not runny.
3. Add salt and pepper.
4. Slice the baguette lengthwise and butter it.
5. Spread the cheese and bread crumb mixture over the baguette and place under a grill for 15-20 mins, until the tops are brown and crispy.
6. Let it cool for 10 mins before slicing into bite-size pieces to serve.
