Cheese toast

This dish is great as an afternoon tea snack, finger food or an entrée for a dinner party.

Makes for 2 persons

Ingredients
½ baguette
50 gm cheddar cheese, grated
50 gm bread crumbs
½ white onion, diced
2 tablespoons coriander leaves

½ green chilli, diced (optional)
3-4 tablespoons milk
Salt and pepper to taste


1. Turn on the grill to the highest temperature.
2. Mix cheese, bread crumbs, onion, coriander leaves, chilli and milk together in a bowl so that it all sticks together, but be sure that the mixture is not runny.
3. Add salt and pepper.
4. Slice the baguette lengthwise and butter it.
5. Spread the cheese and bread crumb mixture over the baguette and place under a grill for 15-20 mins, until the tops are brown and crispy.
6. Let it cool for 10 mins before slicing into bite-size pieces to serve.

Mamak Mee Goreng (Fried Noodles)

The term mamak refers to the Indian Muslim people who migrated from India centuries ago, and generally mamak stalls are owned an operated by them. The mamak stall has been etched permanently into Malaysian culture, dishing out favourites such as this dish.

Ingredients
250 gm noodles
½ red capsicum (pepper), diced
¼ cauliflower, diced
½ tin of mushrooms, halved
1 carrot, diced
½ tofu, sliced into small pieces

Seasoning:
1 tablespoon sesame seed oil
½ onion, diced
1 inch ginger, diced
½ tomato, diced
1 small tin plain tomato sauce (unsalted)
1 tablespoon organic vegetable stock
1-2 tablespoons organic soy sauce

Topping
Lemon wedge
Spring onions, diced
Lettuce, diced

1. Place dried noodles in large bowl. Top with boiling water, making sure the noodles are covered well with water. Let soak for 10 mins or until noodles are soft, before draining off water and set aside.
2. Meanwhile, fry tofu pieces in some oil for about 7-10 mins until all sides are brown. Drain on a kitchen towel and set aside.
3. Heat oil in a wok.
4. Add onion, ginger and tomato and fry for about 2-3 mins.
5. Add capsicum, cauliflower, mushrooms and carrot and fry for further 7 mins.
6. Add the tomato sauce, vegetable stock and soy sauce and fry for further 3-5 mins until all vegetables are cooked but still crunchy.
7. Lastly, add the noodles and mix in well with vegetables and seasoning. Add more vegetable stock and soy sauce if necessary.
8. Top with spring onions and lettuce on the side.
9. Squeeze the lemon juice over noodles just before serving.

Vermicelli noodle salad

Makes for 4 persons

Ingredients:
100 gm (1 bundle) rice vermicelli noodles (available from Asian supermarket)
50 gm fresh bean sprouts (available from Asian supermarket)
¼ cucumber, diced
5-6 cherry tomatoes, halved
2 tablespoons unsalted roasted peanuts
2 tablespoons coriander leaves, diced (available from Asian supermarket)

Seasoning:
1 tablespoon sesame seed oil
4 tablespoons sweet chilli sauce
2 teaspoons sugar
2 teaspoons salt
1 inch ginger, grated
Juice of ¼ lemon
Optional: ½ green chilli, diced

1. Soak vermicelli rice noodles in boiling water for 1 hour.
2. Drain vermicelli noodles and place in large bowl.
3. Add cucumber, tomatoes, peanuts and coriander leaves.
4. In another bowl, mix sweet chilli sauce, sugar, salt, ginger, lemon juice and chilli. Add some boiling water to create a runny sauce.
5. Pour sauce over the vermicelli noodles and mix well.
6. Add sesame seed oil, mix well and top with some coriander leaves before serving.

Fried Tom Yam rice

This dish is best fried in a Chinese wok if you have one. If you are fond of Asian cooking, it is a good idea to invest in one as woks are very versatile. They can be used for stir frying, steaming, deep frying and making soup.

Khichdi is a favourite dish that hails from Gujarat in Northern India. I remember many rainy nights in Singapore when my mother made this hearty dish for the family. This dish brings back fond memories!
